Our Plant: Quality In, Quality Out
From our inspection of raw materials to our customer deliveries, we maintain total control over our entire process. Our plant and processing lines are designed for cleanliness, efficiency and consistent quality. We offer our partners a wide range of capabilities, including:
Canning and Glass Packing — Our FMC Sterilmatic Processing System, with continuous agitating cookers and pressure coolers, quickly produces commercially sterile product, ensuring a quality appearance.
We pack pieces and stems, whole, buttons, sliced whole or sliced buttons in 4-oz., 8-oz. and #10 cans, and can pack completely organic if requested. Our whole or sliced products are packed in 4.5-oz. and 6-oz. glass jars. We hand-inspect our products before they are packed and we continuously inspect our openly visible filling system. Our high-speed labeling line provides a quality appearance for both retail and club store packaging.
Individual Quick Freezing (IQF) — Our IQF line can process a wide range of sliced and diced product.
We are also adept at processing treated, heat-processed, blanched, completely fresh and organic product. To ensure quality, we double-wash each product, meter it into the line and use a computerized system to optically inspect it. The finished product is computer-scaled to a wide range of bag sizes or bulk-packed in cartons of up to 1,000 lbs.
Breading — We offer single-, double- or triple-pass breading, with wet batter or dry breadcrumb coating.
Our automatic batter control system ensures consistency. We can package product frozen, unfried or fried in the oil you specify. Our standard is a trans-fat free soybean oil, and our heat-transfer fryers ensure delicate heating without scorching. We use a spiral freezer for gentle handling of product during the freezing process.
Pizza — We produce 5”, 7”, 12” and 16” pizza pies.
Two 100,000-lb. capacity silos help keep the flour supply free of outside contaminants. Our automated bulk flour system can handle all types of flours, including whole wheat, and blend a variety of crust formulas. Our Tomcat hot press system, and controlled sauce and cheese dispensing systems, all are designed to assure consistent portion control and nutritional content, and a multi-zone oven heats evenly for consistent product quality from pie to pie.
Sheeting — Our versatile sheeting line can produce a variety of products, using single- or multi-layer doughs, with multiple die sizes for various cuts and folds.
And we can deposit a wide range of fillings. We make empanadas, pierogies, crescents, tortes, croissants, pizza, strombolis and other sheeted dough products of any shape or size.
Formax line—We make a variety of mushroom and vegetable patties including our healthy portabella burgers using a Formax Patty Forming machine.
Pouched Sauces — We can produce mushroom sauces of any type in our new state-of-the-art kitchen facility equipped with cooking and blending kettles.
We in-line blanch mushrooms to maximize quality and yield. We can pack sauces in various types of pouch film for reconstituting by boil-in-bag, to steam table, to microwave, and we can use modified atmospheres to ensure the highest quality.
We Make Specialty Sandwiches A Snap
We can make any variety of mouth-watering sandwich you can imagine. Our vast sandwich assembly capabilities include precise in-line slicing of rolls and ingredients and the exact addition of sauces, spreads and condiments to insure consistent portion control. We can use modified atmospheres to maximize shelf life and wrap in a variety of substrates, including Mylar, for oven reconstitution, and printed films for retail sales.
Packaging For Portion Control, Protection And Promotion
We offer a variety of packaging options for your product, including:
- Computerized-scale in-line bagging in a range of precise weights and sizes, with different printed films for institutional and food-service packages and shelf-ready retail packs.
- High-speed flow wrappers with modified atmosphere capability to maximize freshness can use a wide variety of film.
- Fold-and-lock boxes are available in a wide range of sizes for the retail and club store trade, and we partner with packaging suppliers for private-label packages.
- Pouches in various sizes and substrates—with or without modified atmospheres—for boil-in-bag, microwavable, ready-to-serve and other reconstitution methods.
